The Best Winter Warmer - Pumpkin Soup Recipe

Ingredients

  • 2lt veg stock
  • 1 butternut pumpkin
  • 2 onions
  • 2 cloves garlic
  • 1 tin of coconut cream
  • 100g flour
  • 100 grams butter/oil. Melted

Place all the vegetables in a thick bottom pot with the vegetable stock and bring to a simmer for 20mins

Mix the butter and flour in a bowl and slowly add to the soup.

Blend together with the stick blend and season with salt and pepper.

Place back on the heat and cook for a further 10 mins...........yum!
